2018 Dry Riesling

The 2018 Dry Riesling is the driest Riesling I have made yet. Thankfully, our Riesling vineyards in Idaho have made a beautiful comeback. Although there is a lot of delicacy and nuance to this wine, it commands your attention with its bracing acidity, decadent aromas, and solid structure. This Riesling reminds me a bit of the 2012 in terms of its boldness. It is drier and does not have the creamy finish, but it is a commanding wine with a lot of body. Given that, I would say this one can be dressed up or down with any course on the table.
I always ferment my Riesling in Stainless Tanks. This year, I adopted a new yeast I tried in trials last year. I also fermented this wine to dryness and then added sugar back to a level I felt balanced the wine. Another important difference this year is that the wine was machine-harvested. I chose that option because it allowed the fruit to come in cold and it allowed a little skin contact, which is a growing trend in the Riesling world. That skin contact is the reason behind the extra texture of this wine. I will watch how the wine evolves before deciding if I will opt for machine-harvesting next year.
