95% Petit Verdot (Sawtooth block 64)

5% Syrah (Sawtooth block 46)

 

The 2017 Black Mamba is more delicate in nature than years past.  True to Idaho Petit Verdot, it is packed with leather, violets, and caraway seed. However, reflective of the mild end of the 2017 harvest, this wine is more acidic, and less alcoholic and tannic than prior years.  2017 was a luxurious harvest for Idaho winemakers.  Fruit ripened slowly and evenly, allowing for a more relaxed pace. These grapes came in at the end of the season, with mature flavors and seeds, but without the extremely high sugars we sometimes see in Idaho.  As a result, this medium-bodied wine displays nuanced aromas and lively acidity, making it a perfect compliment to many kinds of food.

 

Like all of my Idaho reds, this wine is fermented in open-top stainless fermenters using a variety of commercial yeast strains, and aged in French oak (16 months).  I use punch downs and pump-overs depending on the stage and progress of the fermentation and press immediately when fermentation is complete.  The wine then undergoes malolactic fermentation in barrel and ages comfortably at the winery where I read it poetry:).  Not really, but it is not a bad idea…
